Gorgonzola-Stuffed Figs Wrapped in Prosciutto

Ingredients
- 1/2 C Balsamic vinegar
- 1/4 t sugar
- 1/t=8 t red pepper flakes
- 6 ea fresh Black Mission figs, halved lengthwise
- 4 oz Gorgonzola cheese
- 12 strips Prosciutto
- Parmegiano cheese, finely grated
Instructions
- Reduce the vinegar, sugar and pepper flakes to 1/3 C, then cool.
- Brush each side of the figs with the vinegar reduction, top with some cheese, then wrap in Prosciutto. Grill or broil the figs until the Prosciutto is slightly crisp.
- Plate, drizzle with more vinegar reduction, garnish with Parmigiano, and serve.
